Every year after Christmas it is time for thistle cutting. My Dad decided that it would be good for my little brothers to help out so he got them both machetes for Christmas. Dad also asked me to come along and take some photos of them in action, that meant I had to be up at 6am with the rest of them! It was tiring but rewarding walking around the hills, finding thistles and chopping them down. Once we were done, the farm owners put on an amazing hilltop breakfast complete with croissants, bacon, eggs, strawberries and, of course, champagne!
